Banana loaf (paleo)

I’ve been so quiet, I feel like I’m always apologizing for it and here I go… apologizing again. So sorry guys you know how life and sitting at a desk, studying or working your bum off kinda holds you back from the kitchen and creating Snazzy recipes… id much rather spend my day listening to music and messing up the kitchen for ya but I’m still trying to convince my dad that I have to drop out of varsity to become a house wife who cooks all day, at 21! (totally kidding. He’d kill me). But the drought is over- I shall be flooding your feed with lots of recipes again very soon.

I made a banana loaf a long long time ago and I’ve wanted to create it exactly the same but I have a huge problem with sticking to recipes so I always end up adjusting it, most times it doesn’t taste quite as good as the first one but this one was even better.

INGREDIENTS

DRY

  • 1 cup cassava flour
  • 1 cup almond flour
  • 2 tsp cinnamon
  • 1 tsp baking powder (gluten free) (if you don’t want to use his because it’s not technically paleo then just add a little extra baking soda although baking powder has less of a taste)
  • 1/2 tsp baking soda
  • 3 tsp chia seeds
  • 2 tsp flax meal
  • 3 tsp hemp seeds

WET

  • 1 grated carrot
  • 2 banana
  • 2 eggs
  • Optional 1- 2 tbsp honey or sweetener ( I didn’t add any)
  • 1tbsp crunchy peanut butter

WHAT TO DO

  • Blend the eggs, hemp seeds, banana and honey
  • Grate the carrot and then place in a dish towel and squeeze all the water out.
  • Mix the dry ingredients
  • Add the carrot
  • Add the egg mixture
  • Add peanut butter
  • Pour into a bread tin and bake on medium heat for about 20-30 minutes or until cooked.
