Matcha-choc filled pancakes

Ingredients

  • 1 mashed banana
  • 4 eggs
  • 1 tbsp peanut butter
  • 3 tbsp buckwheat flour
  • 2 tbsp almond flour
  • 2 tsp baking powder
  • 1 tbsp coconut oil
  • 1/4 cup milk of choice (almond milk/ coconut milk
  • 1 scoop matcha, vanilla protein by vibrant health OR sub 2 tsp matcha and 1 tbsp protein, 1 tbsp honey

Blend all wet ingredients and then mix in the dry ingredients. When using buckwheat flour it does make the mixture quite dense and gooey. I haven’t tried the recipe with other flours but I imagine you wouldn’t need as much liquid if you used another flour so you could probably use 3 eggs instead of 4. Buckwheat flour has a very distinct taste but I actually LOVE it.

For the chocolate centers

  • Melt 4 tbsp of chocolate of choice (I used sugar free dark choc)
  • Add 3 tsp of plain yoghurt or coconut yoghurt

On a sheet of wax paper create little discs of chocolate and place in the freezer.

When cooking the pancakes- just place a small amount on a pan and then place the choc discs and then poor more pancake mix over the choc discs.

Then flip and cook like a normal pancake ❀️
