(Chocolate chip + coconut brownies)

My mom wanted me to make her something more healthy for her birthday rather than the usual cake so I decided to make healthier brownies… I know- typical but I decided to bake them this time because warm brownies with some coconut or carb clever ice cream from Woolies/ wellness warehouse sounds like a dream to me.

(Makes 6 brownies)

Ingredients– 2 tbsp flax meal

-3/4 cup desiccated coconut

-1 egg

– 2tsp baking powder

– 1/4 cup water

– 2 tbsp cacao for the mixture

-1/2 cup maple for the mixture

-1/2 cup dark chocolate chips/ sugar free choc/ dairy free choc

-1/4 cup peanut butter (for icing)

– 1tbsp cacao (for icing)

-1/4 cup maple (for the icing)

Can sub maple syrup for honey or other sweetener of choice. I’ve only tried with maple and honey.

Can also try sub almond butter instead of peanut butter… I haven’t tried it but it actually sounds like a good idea. If you give it a try let me know x

What to do

– mix the 2 tbsp flax with 1/4 cup water

– add the egg and maple syrup

-add the coconut, choc chips, cacao and baking powder

– mix everything until it’s all well combined

-place in a baking tin and bake on high heat for 30 min

Icing-mix maple syrup, peanut butter and cacao

For a caramel icing instead use this recipe

  • 3/4 cup coconut creamΒ 
  • 1 cup honeyΒ 
  • 1tsp caramel essenceΒ 

(Bring to boil the coconut cream and honey and then let simmer for 10 minutes then add the caramel essence or vanilla essence…It will become a thick caramel sauce, it’s heavenly)

They were actually quite nice even without any icing so that’s an option too. I just popped some coconut chips and dried figs (which have become my new favorite thing) on top of them to make them look more fancy x
